VINIFICATION: it's traditional with longh-lasting soaking and following refining in French kegs(barriques)for 12/13 months.
COLOUR: deeb ruby red.
BOUQUET: very intense and persistent, fine, wide, spiced, ethereal, of strong personality.
TASTE: dry, very fine, intense and lasting, quite distinguishable.
TO BE SERVED WITH: beef, pork and mutton, well-matured and hot "Pecorino" cheese(sheep's milk cheese), especially that from Crotone.
SERVING TEMPERATURE: 18º-20ºC.
ALCOHOL CONTENT: 13,5% Vol.
